Jeff's Favorite Banana Bread

Jeff Jackson and his wife Elizabeth are wonderful people, sweet friends and have the most precious family. They have four beautiful children (don’t tell the boys I said they are beautiful, but they are). During their married life they have seen medical miracles. Their story is one of great Faith. We serve at church together and I am grateful to have them in my life.
One Sunday morning I made this banana bread and Jeff loved it! He compared it to one of his friend’s Grandmother’s recipe. When he was on the road with a Christian band, she would send some along for the band and crew to enjoy. They loved it and all wanted  to take some home. I was honored by the comparison. Now it is one of my favorite things to make, especially for Jeff.
It is easy, super moist and yummy. Sometimes I make it in a loaf pan and sometimes cupcakes.

Ingredients
  

  • 3 Bananas Tip: always use very ripe bananas when baking
  • 2 Extra large eggs Room temperature
  • 1 cup Granulated sugar
  • 1 tbsp Granulated sugar Separate from the cup of sugar
  • 1 cup All-purpose Flour
  • 1/2 cup Butter Softened
  • 1 tsp Baking soda
  • 1/2 cup Chopped pecans
  • 1/3 tsp Ground cinnamon

Method
 

  1. Preheat oven to 325 degrees
  2. Mix together 1 tablespoon of sugar and cinnamon, set aside.
  3. Mash bananas and set them aside.
  4. Blend 1 cup of sugar and eggs together in mixing bowl until well blended.
  5. Add remaining ingredients except for the cinnamon sugar. Mix by hand until all ingredients are incorporated. Do not over mix.
  6. Pour batter into prepared loaf pan. Sprinkle top with blended cinnamon sugar.
  7. Bake for approximately 45 minutes. Let cool on rack for 15 minutes.
